Chewy Cherry & Chocolate Blondies/Cookie Bars

Excuse the very confusing and unclear title. I used a Blondies recipe, but with dark brown sugar for an extra buttery, chewy taste, which meant that they turned into a dark brown colour that doesn't really fit into the Blondie or the Brownie category. Awkward. Anyway they taste delicious and are unbelievably easy and quick to make!



This recipe is adapted from my favourite baking site: Sally's Baking Addiction.

You will need:

125g plain flour
1 tsp baking powder
A pinch of salt
75g melted butter
200g dark or light brown sugar
1 tsp vanilla essence
1 egg
A handful of glacé cherries
50g chocolate chips


Begin by combining the vanilla essence and melted butter with your sugar.


Next, add the egg and mix well.




Mix the the dry ingredients (flour, salt and baking powder) in a separate bowl, and add to your mixture. Mix all ingredients until just combined.


Chop up the cherries and add along with the chocolate chunks/chips to your mixture.

Pour the mixture onto a well greased baking tray, and place into the oven at 325F/170C for approximately 20 minutes.


Take out once a skewer can be put through the middle and come out clean, and the sides are beginning to shrink away from the edges of the baking tray. Leave to cool, and then cut your blondies and enjoy the soft, gooey chewiness!
