After Dinner Treats: Peppermint Creams

I'm back guys!! After a long essay/exam period I am finally free for a few months and cannot wait for the weather to become a bit nicer again so I can finally relax outside in the sunshine. For the moment, I have a little icon telling me that there are 59 posts to catch up on on Bloglovin' which I think I'll take today to browse through. Does anyone else get really, really irritated by these kinds of things? So many of my friends have little numbers above all their apps on their phones because they just don't check things like their mail regularly. I really can't stand that; even having one new unopened email annoys me!

Anyway, the minute I finished my last exam yesterday I started brainstorming blog post ideas, and I cannot wait to start writing them all. I also have a few trips planned in the next few weeks/months so I will be sharing a lot of them with you guys too - I hope you're excited! This little post I actually drafted a few weeks ago but never managed to post, so here is a quick recipe that I hope you will enjoy:

Peppermint Creams


If you love After Eights, then you will love these simple Peppermint Creams. They taste so similar, but they're homemade, cheaper and therefore perfect for an after dinner treat. I made these simple little snacks the other day, and after initially assuming they would be quite bland and boring, they turned out to be absolutely delicious dipped in chocolate and my family all loved them.


I did take a few pictures of the process... but then I accidentally deleted them. Argh. And yes, they're not perfect; they're messy and slightly uneven, but hey, at least they look homemade, right? The recipe is pretty self-explanatory however, so here it is (minus pictures):

You will need:
1 egg white
350g icing sugar
about 2 tsp peppermint essence
a few drops food colouring (optional)
100g melted dark chocolate

Be warned: You need to prepare these in advance as they take about 24 hours to set properly.

Step 1: Lightly beat the egg white and peppermint essence for about 30 seconds until slightly frothy.

Step 2: Pour your mixture into your measured out icing sugar and stir until the mixture is stiff.

Step 3: Taste the mixture to see if more peppermint is needed, if so then knead in more.

Step 4: If you're using food colouring for any of your sweets, then separate the mixture, add a drop of food colouring to one half and knead it in.

Step 5: Roll or flatten your mixture out onto a surface dusted with icing sugar (or else they will stick). Cut into small circles like me, or simply roll into balls, and place them onto a a baking sheet with greaseproof paper.

Now this is the part where recipes all seem to differ...

Step 6: Some recipes say place in a fridge for 24 hours, whilst others say leave them in a warm place. Personally, I would recommend placing the tray in the fridge for about 4-6 hours, then taking them out once they're reasonable hard, and dipping half of them in your melted chocolate.

Step 7: Put each peppermint cream back on the tray and leave in the fridge for another 18-20 hours to harden and set completely.
